Very fancy version made for my 50th!
Spicy Carrot Cake

This is a great cake, that's easy to make, tasty and pretty healthy

Ingredients

1 1⁄2 cups Carrot (Grated)
1 1⁄2 cups Raisins (Raisins are large dark grapes, smaller white grape ones which are also called raisins in the US we call sultanas)
2 1⁄2 cups Water
3 tablespoons Vegetable oil
1 cup Golden syrup (If you can't get it a pale treacle would be a good replacement)
2 teaspoons Cinnamon
2 teaspoons Nutmeg
2 teaspoons Mixed spice (Or allspice)
3 cups Wholemeal self raising flour
1 cup Walnuts (Chopped into smallish pieces)
1 package Soy cream cheese (We buy it in a tub here)
1⁄3 cup Icing sugar
1 Lemon (The rind is what we want)
1 teaspoon Vanilla essence

Instructions

  1. Place carrots, raisins, water, vegetable oil, golden syrup, cinnamon, nutmeg and mixed spice in a pan, and simmer for 10 minutes.
  2. Allow to cool completely (good to do the day before)
  3. When cool add flour and walnuts.
  4. Mix all together well, and pour into a well-oiled cake tin (or 2 cake tins)
  5. Bake at 180 degrees for 45 mins to an hour. (If putting into 2 tins, they need less baking time).
  6. To test if cooked, poke with a stick of raw spaghetti, and if it comes out clean without cake batter on it, it is ready. Or just give it a push with your finger, if it bounces back, it's probably ready.
  7. Beat remaining ingredients together well, and ice cake with it.
