
Kale Greens
I was showing the Blues Brothers to some friends, so I wanted to think about some classical soul food to go with it. Collard Greens looked healthy and easy to make oil-free. A quick search online said to use kale as a substitute for collard greens, so here you are. I used Tuscan kale but any kale or leaf with a bit of chew in it should work.
Ingredients
1 kale (Large bunch of Kale shredded into 4-5 cm pieces)
1⁄2 Brown onion (Diced)
2 Tomatoes (Diced into 1cm pieces)
4 cloves Garlic (minced)
1 cup Vegetable stock
1⁄2 teaspoon liquid smoke (To taste)
2 teaspoons hot sauce (To taste. I used an organic jalapeno sauce.)
2 teaspoons Black Pepper (To taste, I go heavy)
1⁄2 teaspoon salt

Instructions
- Saute onion in pan until it starts to go translucent or looks a little cooked
- Add in the garlic and cook for a minute or so
- Add in the tomato, and cook until it starts to soften down into the pan
- Add stock, liquid smoke, hot sauce, and stir
- Add in Kale, and cook until it reduces down
- Season to taste
