Brocolli and Tempeh Satay

Tempeh (or Tempe) is an Indonesian food, made from soy beans that we should all probably be eating more of. Cooked in a satay sauce, this dish is as tasty as it is healthy.

Ingredients

1 Onion (large, sliced)
2 cloves Garlic (minced)
1 tablespoon Vegetable oil
2 Hot chili's (Chopped, add more or less depending on your taste)
2 1⁄2 cups Water
3⁄10 cup Soy sauce
1⁄2 cup Peanut butter
1 Carrot (Thinly sliced)
400 grams Brocolli (Lightly steamed)
2 cups Brown rice (To serve)

Instructions

  1. Heat the oil, then saute the onion until golden
  2. Add ginger, garlic and chillis and saute another minute
  3. Pour in the water and soy and carrot and allow to simmer
  4. Add the peanut butter little spoonfuls at a time, stirring well
  5. Allow sauce to thicken gradually
  6. Add the tempeh and simmer another few minutes It will probably have thickened considerably now, so add the extra water until you achieve the consistency you desire
  7. Finally add the broccoli and heat all through together

Serve immediately over hot boiled brown rice
